How to prepare "black-eyed pea gumbo"
black-eyed pea gumbo4 cups black-eyed peas
1/2 pound salt pork
1 cup onions, chopped
1 cup chopped celery
1 cup chopped bell pepper
1 clove garlic
1/2 pound okra, cut up
1 quart or 2 cans tomatoes
2 cans ro-tel tomatoes
1 pound popcorn shrimp *
3 tablespoons margarine
salt and pepper to taste
soak peas overnight.
add salt pork; start cooking. sauté onions, celery, bell pepper and garlic. add to peas with shrimp. add both the regular canned tomatoes and the ro-tel tomatoes and simmer until done.
* substitute with your favorite meat, thinly sliced chicken, round steak or hamburger meat.
