How to prepare "downright easy jambalaya"

1 package zatarain's dirty rice mix
1 onion, chopped
1/2 green bell pepper, chopped
2 stalks celery, chopped
1/2 cup vegetable oil
2 chicken breasts
1/2 pound smoked sausage
1 (8 ounce) jar sliced mushrooms, drained

cook the rice according to package directions. this is best done in a rice cooker, but a microwave is all right. sauté the onion, bell pepper and celery in cooking oil. boil the chicken breasts and cut them into bite-size pieces. parboil the sausage. drain and chop finely or pulse in food processor. combine all ingredients and adjust seasonings. let sit for at least 1 hour.

warm in microwave, taking care not to stir too much. the flavor is best when the rice kernels are unbroken and not mushy.

serves 10.
